Welsh Cakes

So we're a little late to the party. Five days to be exact. Not normally one's to miss an excuse to celebrate a significant occasion with food, the Gents thought that these quick and tasty treats from BBC Good Food were the perfect little nod to the patron Saint of Wales, celebrated on St. David's Day on the 1st of March. They're ready in minutes and perfect served warm. Breadcrumb flour, butter and lard before adding a touch of mixed spice and some dried currants (we used dried sultanas and cherries) then bring together with an egg and a splash of milk. Griddle on a skillet or wide frying pan until golden brown on both sides then, whilst still warm, sprinkle generously with caster sugar. "Hwyl am nawr."
