Walnut & Raisin Loaf
This Walnut & Raisin Loaf as Delia suggests is great with cheese like "a sharp, vigorous Cheddar, fresh goats' cheese or Cashel Blue". The Gents cannot agree more, but it also makes a very yummy breakfast loaf, sliced, toasted and topped with some cream cheese and a drizzle of honey or even some Chocolate, Hazelnut & Almond Spread.
It is super easy to make, combine together the flours, yeast and salt. In a jug, measure out your warm water, sugar and walnut oil. Mix the liquid into the flour to form a dough. A quick knead on a lightly floured work surface and then it's time to add the walnuts and raisins. The easiest way to do this is roll out the dough, sprinkle over the goodies and roll up like a swiss roll. One more quick knead ensures the fruit and nuts are evenly distributed.
Now shape the dough, we've gone for a banneton to proof our dough in, but it can be shaped into a loaf tin or free formed and placed on a baking sheet. After its sat and doubled in size, it's time to pop it into a preheated oven. About half an hour later out will come a gorgeous little loaf, speckled with goodies and with a lovely hint of sweetness.
