Vegan Carrot Cake
With the leaves on the trees in full 'turn' mode and the nights drawing in, what else could be we make for a vegan visitor than gloriously spiced carrot cakes. This Vegan Society recipe, by way of Sarah of The V Nice Life (celebrating all things Vegan), is just the ticket and had we made these next weekend we'd have opted for her spooky Halloween toppings!
This fantastically simple recipe is perfect for novices and children alike. Simply measure your ingredients, mix the dry ones (including your carrot) together then stir in the wet. Pour into cupcake cases or mini cake tins and bake for 20-25 minutes until risen.
Cool on a wire rack then decorate with your favourite toppings. We used fondant, but remember, you can make excellent 'buttercream' with vegan spread. We think they're super tasty, but some nuts would added a satisfying crunch.
