The Boys Do Bake Off - Series 2, Ep.6 - Dessert Week
It's time for another Bake Off technical and this one comes courtesy of Mary Berry via BBC Food. This episode saw the contestants battle this flourless/fatless sponge and first place went to, eventual series champion, Jo Wheatley.
This is a simple recipe with a few technical tricks ,that if you get them right, will reward you with a light yet decadent chocolatey dessert.
Melt your chocolate in a bain marie until just melted. We took ours off the heat with a few lumps left and the rest dissolved with the residual heat. Set aside to cool. Next separate your eggs, careful not to let any yolk into your whites and beat the whites until firm (not dry). Your mixing bowl/whisk must be impeccably clean otherwise your whites wont turn into the voluminous pillowy clouds you want.
Beat your yolks and sugar until creamy and thick then stir in your cooled chocolate. Add a spoon or two of the whites and beat well to loosen the mix. Fold the rest of your whites in gently, to avoid loosing the air. Finally sift then stir in your cocoa. Pour onto a lined tray, level, then bake.
After leaving to cool completely, whisk your cream until firm (it needs to hold it's shape). Turn your sponge onto some parchment, liberally dusted with icing sugar and spread with your cream. Now to roll. Cut a line along one short end, about an inch in, then fold over. Don't worry that it breaks, this just helps start the roll. Next, using your parchment to maintain an even pressure, roll up until you've covered your end.
There you have it. Don't panic and it'll turn out just fine, and remember, if Mary says it's meant to have cracks, then it's meant to have cracks.
