Sweet and Spicy Beer Can Chicken
"Shove a can of beer up it's bu*t"! At least that's what we imagine some lively Americans said one day that led to this recipe for a delightfully moist and tender chicken roast.
This Sweet and Spicy Beer Can Chicken from Jamie Oliver is a simple way to ensure you never eat dry chicken again. The prep is easy with a homemade spice rub liberally applied to your bird, which is then placed delicately, if rather unceremoniously, atop an open can of your favourite brew (we opted for a Carlsberg, but you could use any beer or non-alcoholic liquid in an empty can or tin).
The chicken roasts upright in the oven before getting slathered in barbecue sauce for its final 10 minutes. This sweet and smoky glaze turns an already tasty bird into a mouthwatering delight.
Served with scattering of fragrant chilli, coriander and spring onions with a generous helping of crunchy coleslaw and sweet corn-on-the-cob on the side, this roast is sure to bring some sunshine to brighten up any chilly winters day.
P.S: Don't let the carcass go to waste! Chuck your bird in a saucepan with some carrots, celery and a bouquet-garni of your favourite herbs, then cover with boiling water and simmer for an hour or so, and voila an easy chicken stock.
