The Boys Do Bake Off - Series 3, Ep.6 - Pudding Week

Over half-way through the series and the Gents have hit pudding week, and Mary's 'technical challenge' was the classic Queen of Puddings. In a departure for the Gents we've stuck entirely to Mary's recipe. Seriously, not a tweak in sight!

Start by making a light custard, warm your milk and then add in lemon zest, butter and sugar before whisking into egg yolks. To this you add your fresh breadcrumbs before leaving to soak for 15 minutes. Bake until set (but wobbly) in a bain-marie then set aside.

We used frozen summer berries to make a quick jam, however, as you only need a few tablespoons you could always use a jar. Spread evenly over your custard then get on with your meringue. Simply whisk egg whites until stiff before adding your caster sugar a teaspoon at a time.

Pipe your glossy meringue over your jam layer and bake again, this time in a cooler oven, until crisp and lightly coloured.

We're like to think her Majesty would approve, but suffice to say we reckon it's fit for any King, Queen, Prince, Princess, Frog, Fairy Godmother, Wizard...
