Pret's Crimble Crumble
The lovely people at Pret kindly shared this recipe that cleverly combines a festive favourite (the Mince Pie) with two British classics (flapjack and crumble) - their newer version uses a shortbread base instead, but we rather liked the sound of the flapjack.
The base of this tray back is a relatively standard flapjack recipe of oats coated in butter and sugar plus golden syrup and little honey. This is NOT a healthy recipe!
On top of this we add a layer of mincemeat studded with cranberries. Of course you can buy anything from a the basic everyday mix to jars that are boozy, richly fruity and luxurious, but we've opted for our homemade suet-free mincemeat that's zesty and delicious.
This all gets topped off with a light crumble topping before being baked. Turn out and allow to completely cool before slicing into bars and dusting with a little icing sugar snow.
Perfect with a cuppa or a glass of something stronger. "Pass the sherry mother...".
