The Boys Do Bake Off - Series 5, Ep.8 - Advanced Dough Week

In this episode the remaining five bakers were set a tricky Eastern European technical from Paul Hollywood. Povitica (pronounced Pov-e-Tee-za) is an enriched bread with swirls of nutty chocolate filling. Having just made a date and walnut version for her signature, Chetna raced to victory in the technical, before her GBBO journey ended the same episode.

Using Paul’s recipe from BBC Food, we started by making our enriched dough, adding sugar, butter, egg and vanilla to our yeast and flour mix before bringing together with milk. Whilst the dough proved it was on to the filling, blitzing walnuts with vanilla, sugar and cocoa and combining with warmed butter and milk and an egg yolk.

After proving for an hour it was time to roll out and, with the ultimate aim being a 100cm by 60 cm paper thin piece of dough. Unlike the bakers we don’t have the luxury of yards o uninterrupted worktop so opted to work in two parts. We partially rolled out our dough on a well floured clean tea towel before brushing with melted butter and continuing to roll until our dough was 50cm by 60cm.

The recipe asks for the filling to be evenly spread over the dough, however, its incredibly sticky and difficult to handle and certainly wouldn’t spread on our dough. We placed our filling in evenly spaced dollops before patting flat with greased fingers! Rolling along the long edge we created our dough sausage and placed into our greased loaf tin before repeating with a second sausage.

After a second prove and an egg white glaze we baked our Povitica to glossy golden perfection!
