The Divider Of Opinions
For this week’s Pizza Friday we made a rather unusual pizza, and topped another one with an ingredient that divides opinion.
Our first pizza is Duck with Hoisin Sauce, Spring Onions and Cucumber - essentially a pizza version of Chinese duck pancakes. The pizza base was topped with hoisin sauce, sprinkled with shredded crispy Peking duck and dotted with mozzarella. Once out of the oven it was topped with chopped spring onions, cucumber and an extra drizzle of hoisin sauce. Deliciously unusual.
Our next pizza is Ham and Pineapple. The pizza base was topped with a tomato sauce (we simply reduced passata until thick) and Prosciutto di Speck (an air dried, spiced, smoked ham) and mozzarella. Pineapple is a bit of an opinion divider when it comes to pizza toppings, but we think it works well as a contrast to the smoked salty ham, so on it went, before the pizza got a sprinkling of chilli flakes.
We served our two pizzas with a garlic bread - same pizza base but it was topped with a garlic and herb (parsley, sage and mint) butter.
