We're Nuts About These Cookies...

Peanut Butter Cookies

The Gents love baking things that are naughty but nice and these treats from Becky Excell's gluten free blog are just the ticket. Now, to be clear, our version is neither gluten free (we use standard plain flour) nor vegan (we used honey instead of maple syrup), but the recipe is super easy to adapt.

Everything except the flour goes into a bowl or mixer. Cream those together then add the flour. The only prep required is weighing, mixing and shaping! Divide your dough into portions of your choosing and roll into rough balls. Place on a non-stick baking sheet and gently pat down with a fork then bake. We made 30 smaller cookies and found 12 minutes was just right rather than the recommended 15 minutes.
