It's the final week of #TwitterBakeAlong challenges along side The Great British Bake Off Stand Up To Cancer series.

'Brought to you by Cancer Research UK and Channel 4, Stand Up To Cancer is an annual fundraising campaign that brings the UK together to accelerate progress in life-saving cancer research. Stand Up To Cancer takes developments in the labs and accelerates them into brand new tests and treatments for cancer patients who need them right now. Originating in the USA, Stand Up To Cancer launched in the UK in 2012 backed by a host of celebrities, all intent on showing cancer who’s boss.'

For this final challenge The Baking Nanna and Robert Allen have tasked us with making any of the three bakes featured in Ep. 5 of Stand Up To Cancer's Bake Off; the 'signature' (muffins), the 'technical' (custard tart) or the 'showstopper' (dream rainbow cake).

With a fresh batch of deliciously tangly Bramley Apple and Lemon Curd eyeing us from it's jar, we just knew we had to bake a batch of gooey centred muffins. The buttermilk muffins have a handful of oats to give texture and are filled with generous spoons of curd before being topped with a light, lemon scented, buttercream frosting and a homemade apple crisp.
