There's Really No Need...
No Knead Bread
We've said it before and we'll say it again. There really is nothing quite like the smell of freshly baked bread but, it's so much hassle right? Wrong! In a world of convenience and bread makers (ok, so they have their place), this home baked loaf just couldn't be simpler.
Put your ingredients in a bowl (400g strong white flour, 300ml water, 10g salt and 5g fast action yeast) and combine to form a dough. Cover and leave in the fridge overnight. The cold slows the rise allowing loads of glorious gluten to form and remember, slow bread is tasty bread! In the morning, turn out onto a floured surface and fold once, twice, three times then four (a quarter turn each time) before forming into a tight ball. Cover and leave to prove for approximately 30 minutes.
In the meantime heat a dutch oven (we use an old Le Creuset) to 230C. When your oven is hot and your dough risen, place your dough into your dutch oven, but don't drop it like we did. You'll end up with a rugby ball! Bake for 40-45 minutes, removing the lid after 30 (or 25 covered and five off if you have a very hot fan oven like the Gents!).
