We've decided, somewhat foolishly, to have a go at Paul and Mary's 'technical' challenges from the ever popular 'Great British Bake Off'.
For our first challenge we're tackling a Women's Institute/British classic, the Victoria Sponge (Series 1, Ep.1). Often the victim of unnecessary additions and poor imitations, this 'true' Victoria Sponge is an exercise in simplicity and restraint. A light vanilla sponge, filled with raspberry jam (with seeds, not without) and generously dusted with caster sugar.
There are many basic sponge recipes out there and all are a combination of fat, flour, sugar and eggs. For a foolproof sponge that's light as a feather every time, weigh your eggs in their shells and use that weight for your fat, flour and sugar. Simple.
