You Don't Get These At The Movies...
Mini Toffee Popcorn Cupcakes
We found this yummy recipe via Baking Mad, but it was actually produced by Caroline Muspratt and features in the 2013 edition of The Little book of Treats produced by Macmillan Cancer Support.
Although this is scaled for 12 full sized cupcakes, we thought that as a 'Little Treat', why no make mini versions. They're wickedly sweet and decadent, so unless you posses an incredibly sweet tooth these bite sized versions are just right.
Start by creaming your butter and sugar, in a bowl or mixer, until light and fluffy. Slowly beat in your eggs, one at a time, then gently fold in your flour. Finally, mix in your soda water before folding in your fudge pieces then spoon your mix into your cupcake cases. You should get 12 standard cupcakes or approximately 36 mini cupcakes from this quantity of mix. Bake at 160 degrees fan for 12 minutes (for mini) or 20 minutes (for full size) then set aside to cool.
Next its toffee time! Add your butter and sugar to a heavy bottomed pan and heat to dissolve the sugar. This is all the recipe states, however, you should bring to the boil, stirring constantly and keep going for 4-5 minutes. Take off the heat and gently beat as it cools to form a perfect toffee sauce.
For the buttercream you'll replace some of your butter with toffee sauce, but make sure you beat it until light and fluffy. Spread generously on your muffins before topping with toffee popcorn and a drizzle of your toffee sauce.
All that's left is for you to enjoy your 'Little Treats'.
