Lemon Drizzle Loaf Cake
Next up for #TwitterBakeAlong and the Gent's afternoon tea is everyone's favourite picnic cake, lemon drizzle. Opting for mini loaf tins we decided to use a scaled down simple sponge recipe using two eggs. Weigh the eggs and you've got the measurements for your butter, sugar and self-raising flour. A generous helping of lemon zest to the mix and 25 minutes in the oven and you're halfway there. Leave them to cool in the tins then pour over a good helping of lemon sugar syrup. Once it's all soaked in a drizzle of lemon icing and some extra zest completes this fruity package.
