It Happens Every Time, They All Become Blueberries...
Lemon, Blueberry & Yoghurt Cake
We follow some great bakers on Twitter and as such our 'baking ideas' notes folder is bursting with links for future creations. Flicking through this afternoon we noticed this link to a tasty sounding Lemon, Blueberry and Yoghurt Cake from Ness at JibberJabber. A quick dash to the shops for some blueberries and we were good to go.
This recipe could not be any simpler to follow - in a bowl goes your fat (softened butter or baking spread), self-raising flour, baking powder, caster sugar, eggs and lemon zest. After a quick beat, some natural yoghurt is folded in.
The mix goes into your prepared tin and the blueberries are scattered over. Into the oven and the cake is baked until a skewer comes out clean. The recipe suggested 50 minutes but ours was ready after 40, though our fan oven does cook things quicker than normal.
The cake is then pricked all over with a skewer and a quick lemon juice and sugar glaze is drizzled over and it's left to cool in the tin.
Told you it was simple - now all you have to decide is whether to have a slice with a cuppa or a dash of cream. Oh and, as blueberries are a superfood, it is completely acceptable to have seconds.
