For this week’s #TwitterBakeAlong we were presented with two delicious choices; you could go with #TeamNanna and make a coffee cake or #TeamRob and make a lemon cake. Normally we would be all about the coffee but, with hints of summer peaking through the Bank Holiday weekend clouds, we went for deliciously light lemon cake instead.

This bundt recipe, from Jane’s Patisserie, teams a lemon scented sponge with juicy blueberries and punchy lemon icing. Our cake stuck a little coming out of the tin, as the majority of the blueberries sunk to the bottom (or is it the top?) during the bake, but that’s what icing, creative decoration, and knowing your angles for capturing the perfect photograph is for!
