Jammiest Coconut Cake
This week's Great British Bake Off saw the bakers tackling all things cake, from a tray bake, to a nutty technical and a complex tiered, chocolate wrapped showstopper. For those of us utterly hooked by #GBBOTwitterBakeAlong (hosted by the The Baking Nanna and Robert Allen, and sponsored by Great British Chefs) our challenge was to make just one of those cakey delights and we went with the tray bake.
We found a fruity sponge recipe from GBBO alumus Miranda Gore Browne (by way the Happy Foodie) that evokes school days nostalgia. A delicate coconut sponge swirled with jam (we used our homemade strawberry jam from our Charlotte Royale), topped with bright pink sweet icing (we used fruity Raspberry Ripple icing sugar from Sugar and Crumbs), more coconut and a glace cherry for good measure!
