Ain't Nothin' Duff(in) Here...
Another week, another #TwitterBakeAlong challenge from The Baking Nanna and Robert Allen and this week it's doughnuts, set by the fabulous Louise Williams from Season seven of Great British Bake Off. Now, like many of our esteemed Twitter Bake Along colleagues, we love to take each challenge with a tiny bit of salt and this week is no exception. No frying for the Gents (unlike our Bake Off technical challenge when we attempted a classic jam doughnut) as we've opted for 'Duffins'. These doughnut/muffin hybrids come courtesy of Bea's of Bloomsbury.
These tasty treats could not be easier. Measure out all your ingredients and place in a large bowl or mixer before combining to make your batter. Spoon into muffin tins (we've used paper cases as our silicone muffin trays aren't great) then bake until lightly golden and well risen.
Whilst still hot, coat in melted butter (we used a pastry brush), dredge in sugar and fill with a generous helping of raspberry jam.
It really is as simple as that.
