Jam and Coconut Loaf
Picture it if you will - queuing up with your fellow classmates, all clutching your compartmentalised trays to get your lunch before playtime. In goes your main course but what you are really looking forward to is the pudding. A large tray of sweet sponge, liberally coated with jam and sprinkled with desiccated coconut. Those were the days! When the most important decision you had to make that was whether you wanted chocolate or pink custard poured over your cake from the large stainless jug. Us Gents remember it well, but then we are of that age. We wonder if kids these days will have the same fond memories of school lunches?
Spring forward a 'few' years and we find ourselves in the kitchen making this nostalgic coconut loaf. There are many recipes out there but we went for Julie's recipe from Julie's Family Kitchen and it really couldn't be any simpler to make.
Start by heating your oven. Next in a bowl goes all your cake ingredients - flour, butter, sugar, eggs and coconut. A quick mix and its into your prepared loaf tin. Bake until risen and golden brown - if it's not quite cooked but browning too quickly then cover with a bit of foil. Once cooked, allow to cool and then spread on your raspberry jam and sprinkle over some coconut. We told you it was simple.
Serve with a grown up cup of tea or, if your up for a bit of nostalgia, why not rustle up some pink custard?
