Iced Buns with Jam & Cream
The Boys Do Bake Off - Series 2, Ep.7 - Patisserie Week
With Spring most definitely in the air we decided it was time for another Bake Off technical challenge. So to week seven of series two and the battle of the iced fingers. What's that? These are buns? So we wanted to make buns.
We've used Paul Hollywood's trusty recipe from the BBC Food website. Simple and reliable these are a great treat to make on a lazy Sunday and you're sure to make friends and family very happy indeed.
This is an enriched bread dough so think ahead as you need softened butter. When you're butter is soft put all your ingredients into a bowl or mixer and combine to form a soft sticky dough. Place on a floured surface and knead well until your dough is glossy and elastic. It's going to be very soft and very sticky as it's enriched, but persevere!
One risen, knock back and shape then leave to prove again. Place on a floured tray or pan and leave a little room to spread, but not so much they don't touch. This is a batch style roll and you want the un-crusted bits! We allowed a little too much room and ended up with two batches of six.
Once risen, bake in a hot oven for 10 minutes. We covered ours for seven then uncovered for three and they still browned quickly in those three minutes. The egg and the sugar will caramelise in the dough, so know the temperature of your oven as you want a light golden finish.
Once cooled, dip in water icing, split, then fill with jam, we used our homemade strawberry, and lightly whipped cream.
