Homemade Cream Cheese
No, this isn't cheaper than buying it ready made from the supermarket. No, it's not perfectly bleached white like certain popular brands. But..... you can make you're own cheese and it's really easy!
Besides a thermometer and some very amateur engineering, this recipe from Jessie Moore at Craftsy is super easy (so long as you have a little patience).
Gently heat your cream, milk and salt, stirring continually, until it reaches 180 degrees Celsius then remove from the heat. After 5 minutes stir in your vinegar then cover with a tea towel and leave to cool (ideally overnight).
Next, over a sieve or bowl, pour your thickened mixture into a cheesecloth (we used a clean cotton tea towel) and suspend to allow the moisture to drip. You could tape the cloth to the side of a bowl or pan, or like us, tie the top with string and hang it from your kitchen cupboard handle over your pan.
Leave for several hours, or overnight to drip, and when the mixture has firmed up simply transfer to a container and place in the fridge. Voila. Cream cheese.
Ours has a rich tart flavour and you may wish to play around with the quantities or vinegar and salt according to your own tastes.
