Herby Olive and Feta Cob
It's back to our old faithful and foolproof loaf, courtesy of Paul Hollywood. This classic cob makes a great base for tweaking and we just can't resist a tweak! After an overnight proove (because slow means flavour), we added salty and sweet Queen green and Kalamata olives, crumbled feta cheese and a generous sprinkling of oregano and mint. The addition of ingredients with a relatively high moisture content requires a longer bake, we added 10-12 minutes, however, a blanket of foil stops your crust burning. Serve with a variety of delicious Mediterranean treats or turn your basic sandwich into something special.
