Healthy Eating - Week Two

Another week of delicious and healthy eating and we are neither starving or weak with fatigue! These speedy fresh and tasty dinners really are superb and, as well as tantalising our taste buds, they’re helping us get a little more trim…

Sunday Dinner: Veggie Soba Noodle Pots

These noodle pots from Olive Magazine are packed full of tasty vegetables - edamame (we used broad beans), broccoli, carrots, cucumber. radishes and spring onions, brought together in a sriracha, ginger and garlic dressing.

Monday Dinner: Italian baked Fish with Olive Oil Mash

Baked fish is served with peppers, courgettes, cherry tomatoes and olives, alongside mash made with a drizzle of olive oil. This dish from Slim Fast is served with a sprinkling of basil.

Tuesday Dinner: Jerk Cauliflower steaks with Rice and Peas

Cauliflower steaks, recipe from Olive Magazine, are marinated in lime juice and jerk paste before being oven roasted until tender and slightly charred. The steaks are served with rice and kidney beans - we forgot to get coconut milk, so we cooked the rice (we used brown basmati) as usual and doubled up on the kidney beans.

Thursday Dinner: Japanese Miso Potato and Chicken Broth

Diced potatoes and shredded free range chicken are served in a broth of miso, lemon and ginger in this recipe from lovepotatoes.co.uk. As suggested we upped the vegetable content with some shredded savoy cabbage and added some thinly sliced radishes.
