Healthy Eating - Week One
Whilst we’re not into making New Year's resolutions, an impending ‘significant’ birthday felt like a good excuse to make an effort to drop a few pounds and to really think about what we’re eating. Whilst our search for recipes inevitably means lower calorie counts as well as cutting out overly processed foods and ingredients, it absolutely hasn’t cut out flavour. After all, if it doesn’t taste good, you’re not going to stick with it. As well as reducing the impact on our waistlines it’s certainly not hurting our wallets! With a selection of hearty soups for lunches, our evenings and weekends included the following delicious dishes:
Sunday Dinner: Spiced Cauliflower Dhal
First up we had Spiced Cauliflower Dhal from Laura Herring’s The Fast Days Cookbook via Delicious Magazine. The tasty fragrant vegetarian dhal was topped with cumin seed and sumac roasted cauliflower.
Monday Dinner: Haddock with Cannellini Beans and Artichokes
Next up was Haddock with Cannellini Beans and Artichokes from BBC Good Food. We chose to bake in an ovenproof dish, rather than en papillote as the recipe suggests, and it was served with lemony garlicky beans and artichoke hearts.
Tuesday Dinner: Burrito Bowl with Chipotle Black Beans
Again from BBC Good Food came our next dinner; Burrito Bowl with Chipotle Black Beans. “This healthy burrito bowl is chock full of veggies and greens…” and it was certainly a firm favourite with us.
Wednesday Dinner: Greek Quinoa Salad
Salad’s don’t have to be boring and this Greek Quinoa Salad from Slim Fast certainly wasn’t. We used a nutty quinoa, bulgar, freekeh mix which worked well with the classic flavours of feta, parsley and olives.
Thursday Dinner: Veggie Omelette
Another recipe from Slim Fast was this tasty Veggie Omelette which was packed full of bright colourful veggies. We swapped out the cheddar for some leftover feta.
Friday Dinner: Zingy Teriyaki Beef Skewers
It’s Friday night and at the end of the working week a takeaway kebab can seem like a great idea. Well these Zingy Teriyaki Beef Skewers from BBC Good Food are a great fakeaway option - “rich in folate, fibre, iron and vitamin C, plus 3 of your 5-a-day” - bonus!
Saturday Lunch: Beetroot Rice with Feta
With some extra time for a leisurely weekend lunch we rustled up Beetroot Rice with Feta from Olive Magazine. Raw beetroot is pulsed in a blender to create ‘rice’ which is mixed with dill and sunflower seeds with an orange and toasted cumin dressing. Feta tops the salad and we also went for some crunchy diced apple.
Saturday Dinner: Chickpea and Squash Coconut Curry
Our last meal for this week was another recipe from Olive Magazine, Chickpea and Squash Coconut Curry. This deliciously light curry can be served with rice, but with such a low calorie count we chose just to double up on the portion. Yum!
