Gurkha Chicken Curry
Quite honestly there is nothing Ghurka about this curry as the Ghurkas are a section of the British army that was formed in Nepal. So what we really have is a Nepalise curry, and all thanks to those cheeky chappies on Southend Pier, Jamie Oliver and Jimmy Doherty and their Friday Night Feasts.
As simple as this curry is, you will need to plan in advance to get the best results. Late a night the Gents found themselves heating up the ingredients for their marinade, blitzing to rough paste and mixing through yogurt, lemon juice and lemon zest, before spooning over their waiting chicken thighs and wrapping them (the chicken thighs and The Gents) up for the night!
The next day, with mouths watering, we were ready to cook. With the oven pre-heated we add our remaining spices to the pan. Next, in goes our chicken in a single layer, to ensure we get a good crust. Once browned on one side, add the remaining raw ingredients and continue to cook until golden all over. Add the leftover marinade and stock to the pan and place uncovered in your pre-heated oven.
Serve with a dollop of sharp natural yogurt and you're choice of rice/breads. We've served ours with brown and wild rice as well as Cauliflower Flatbreads.
