An Eggcellent Accompaniment...

Custard Sauce

The Gents have looked to their trusted advisor, Felicity Cloake (writing for the Guardian), to find the best custard accompaniment for their Christmas puds. There are many custard recipes to choose from and, like Felicity, the Gents love everything from lovingly handmade to "the kind that comes in a little cardboard pot with a picture of a bird on it." This version is simple, relatively quick and perfectly judged when it comes to sweetness and vanilla.

Simply whisk egg yolks with a little sugar and a little cornflour and set aside. Heat milk in a pan with vanilla until it just reaches a simmer. We used vanilla bean paste instead of a real pod. It's a handy cheat and still gives us the all important flecks in the finished custard.

Take the milk off the heat and whisk into your egg mixture, taking care to keep it moving and avoiding the dreaded scramble! Place back in a pan over a gentle heat and stir, stir, stir until you reach that perfect, coating the back of spoon, consistancy.
