Coffee & Oat Breakfast Muffins
So you're sitting there meal planning for the week but an idea for breakfast is failing you. You need something easy, tasty and portable so that you can grab and run to the tube station. Usually you would make your Banana and Blueberry Muffins, but you just used your overripe bananas to make an Olive Oil Banana Cake. Procrastination is the word as you flick through Twitter and all of a sudden a tweet from Camp Coffee comes up with a link to their Coffee and Oat Breakfast Muffins - those psychic caffeine wizards.
What's great is that the recipe calls for usual store cupboard ingredients, so they can be whipped up in no time. What do you mean you don't have Camp Coffee in your pantry? Shame on you - well you'll need to make a trip to the store then.
tart by preheating your oven to 200ᵒC (180ᵒC Fan) and then melt the butter, a microwave is fine for this, and set aside. Next combine flour, ground almonds, oats (we used muesli instead), bicarb, baking powder and sugar in a large bowl. In a separate bowl whisk together the Camp Coffee, milk, egg and the cooled melted butter.
What's left is to combine the wet and dry ingredients until just combined. Don't overwork the mixture otherwise you'll end up with dense muffins. Now spoon the mixture into 12 muffin cases, sprinkle with oats and bake for 20 minutes (though this depends on your oven). Once baked cooled on a wire rack.
Quick and simple, breakfast is sorted for the week. Now we just need to remember to set the alarm!
