Clementine Sponge Cake
With a fantastic clementine jam just begging to be used, we thought we'd whip up a simple zesty sponge cake to balance out all that rich heavy festive food!
To a simply sponge base (eggs weighed and the same weight of sugar, self-raising flour and spread) we added the zest of a couple of oranges before dividing between sandwich pans and baking until golden and cooked.
We then filled the cooled cake with a light orange buttercream and our delicious jam and finished with a dusting of caster sugar.
