Classic Victoria Sponge

It's time for another #TwitterBakeAlong (from The Baking Nanna and Robert Allen) and it's a right Royal occasion. For many of us this classic sponge cake, originally created for Queen Victoria, was our first foray into the wonderful world of baking and the Gents are no exceptions. Despite some gentle pictorial direction for a 'plain' or 'decorated' Victoria sponge, for us Gents it just has to be the W.I. classic. A simple sponge filled with raspberry jam (no cream) and a generous sprinkling of caster sugar (not icing sugar). Weigh your eggs and use that measure for your fat, flour and sugar. Bake, fill, sprinkle and serve. Marvelous
