Batten Down The Hatches, Christmas Is Coming!
We're back with another #TwitterBakeAlong. The fantastic Baking Nanna and Robert Allen have joined forces with the rather fabulous Britt Whyatt (a.k.a. She Who Bakes), a Homepride Community Baker and set the challenge of making a Battenberg. Now this wont be the first time the Gents have ventured into Battenberg territory. Earlier in the year we made a classic Coffee & Walnut Battenberg as part of our 'Boys Do Bake Off' series but, this time things are getting festive.
Using She Who Bakes Homepride recipe start by creaming butter and sugar until light and fluffy before mixing in eggs and almond extract. To this fold in your Homepride flours and ground almonds before dividing the mix in two.
Coloured each half using a gel icing colour before spooning into your prepared tin/s. Now, you can do all sorts of nifty folding of baking paper or, if you fancy being very lazy like the Gents, you can use a Battenberg tin.
Bake until the cakes spring back then transfer to a wire rack to cool completely. Once cooled trim each cake until you have four even blocks. To contruct, make a simple buttercream and cover two sides of each block and sandwich together. Carefully coat the rest of your cake but leave the ends uncovered.
Finally roll out your marzipan until you have a rectangle then use this to cover your cake. If you work from the bottom up you can create a neat seam that you can hide on the bottom. Trim the ends and you'll have a classic Battenberg but, why stop there?! We turned our cake into presents, just in time for Christmas...
