Chocolate, Almond & Courgette Loaf Cake

Don't you just find it annoying when you need a certain number of fresh produce but it works out cheaper to buy the pre-packed version of the product? Well, we found this with a pack of courgettes this week. Not wanting the 'spares' to fester in the back of the salad drawer, a quick search found this recipe from television and radio presenter Fearne Cotton (from her cookbook Cook. Eat. Love). A couple of tweaks meant that we could rustle this up from things we had in the store cupboard, we used golden caster in place of the coconut palm sugar and plain flour for the spelt flour. The courgette helps make this chocolate loaf lovely and moist, and keeps this rich cake light. We're not 100% sure this counts as one of your five-a-day though...
