Cheese, Spring Onion and Chilli Sourdough

After the success of the Cheese, Spring Onion and Chilli Scones we decided to recreate the flavours in sourdough form. Using our 'go-to' recipe, Sourdough Pain Naturel from The Weekend Bakery, we added a tablespoon of chilli flakes (a mix of regular, ancho and chipotle) to the dough at the start of the process to ensure their flavour got into every inch of the final loaf. Then before the final shape and proof we stretched out the dough and sprinkled over grated extra mature cheddar and chopped spring onions. The crust was darker than usual but we think this was due to the fat from the cheese however this didn't affect the final flavour.
