The Boys Do Bake Off - Series 4, Ep.9 - French Pastry Week
This week is the final #TwitterBakeAlong (hosted by The Baking Nanna and Rob Allen) before the Great British Bake Off returns to our screens for series 9. Setting the challenge this week is the lush Katie Davies (contestant and all round super mum on the inaugural series of Britain's Best Home Cook) with a recipe for Swiss Roll from the BBHC book.
This week's challenge, as well as the countdown to GBBO 2018, is the perfect opportunity for us to get back on track with our 'Boys Do Bake Off' series as we work our way through all the GBBO technical challenges... cue Charlotte Royale.
Start by making a simple strawberry jam and set aside to cool. For the Swiss roll sponge whisk eggs and sugar until light and fluffy before folding in flour and pouring into a lined Swill roll tin (we're halving this recipe so only need to line one pan!). Bake until lightly golden before turning out onto baking parchment sprinkled with icing sugar. Spread with the cooled jam and roll.
Stage 1 complete and we've already met our Twitter Bake Along brief! Now on to the bavarois...
Soak gelatin leaves in cold water and set aside. Blend and sieve raspberries before adding a splash of raspberry liqueur. Whisk egg yolks and sugar before pouring over (and whisking continually) hot milk with your softened gelatin. Cook until coating a spoon then cool a little and fold in the raspberry puree.
Line a bowl with cling film before covering with your sliced Swiss roll (do not leave any gaps). Fold in softly whipped cream to your bavarois, adding the remaining raspberry puree and diced strawberry and pour into your Swiss roll lined bowl, topping with your final slices of roll. Cover with cling film and chill overnight.
Decorate with a clear sugar arrowroot glaze and some fresh fruit.
