Flatbreads? Well They're Flat..!
We must begin with a confession. The original recipe is for tortillas not flatbreads, but we swapped lime for chilli and cumin so that they go with our Ghurka Chicken Curry. Also, we don't think you can really class these as a bread, after all there's not a single grain of flour to be found anywhere near this interesting recipe.
Blitz cauliflower until it fine. Heat in the microwave. Squeeze out excess water. Add chopped coriander, chilli and toasted cumin seeds. Combine with egg and 'shape' on trays into flatbreads. Bake. Dry fry for extra colour.
