Bake for Heroes
This week #TwitterBakeAlong is supporting #BakeForHeroes from @HelpforHeroes in the run up to Armed Forces Week and the challenge was to bake a carrot cake. We’re huge fans of this delicious bake and opted for this Easy Carrot Cake from Cassie Best for BBC Good Food. It’s a much lighter recipe than we’re used to which is perfect a late spring bake and lent itself perfectly for us to try a more ‘naked’ approach to our decoration!
The batter is a simple mix of wet and dry ingredients, with natural yoghurt in the mix for moisture. There’s a slight curve ball in the preparation in that the sugar is mixed in dry with the flour but, that aside, it’s incredibly easy to make. We opted for a light vanilla and cinnamon buttercream as we were out of cream cheese and added toasted nuts for a little extra crunch.
