We carrot get enough...

Carrot and Ginger Loaf Cake

We had some cream cheese frosting left over from our Chocolate Guinness Cake so, rather than letting it go to waste, we rustled up a Carrot Cake. Using this James Martin recipe from BBC Good Food we made a few tweaks; instead of sultanas we used glac√© ginger, ground ginger instead of mixed spice, and mixed chopped nuts instead of walnuts. We didn't add cinnamon to the frosting but we think it would probably work rather well.
