This recipe from Caroline Hire for BBC Good Food includes real brandy, something missing from many brandy snap recipes. Never ones to shy away from a tipple we like how simple yet indulgent these crisp spicy treats can be.
We melt butter, sugar and golden syrup in a pan on a medium heat. We believe that you can find amazing ingredients is many places and 'own brand' options are often cheaper and just as good. However, Lyle's Golden Syrup is an iconic brand that just cannot be beaten. After all, it's still at the top of it's game despite having a rotting lion carcass with bees above and the slogan "Out of the strong came forth sweetness" on the tin!
We digress. Mix the melted ingredients with the dry until you have a thick batter. Spoon onto a baking sheet (allowing room for spread) and bake until lacy and golden. Leave to cool for a minute or so before shaping around a handle (for cigars) or laying over a small ramekin (for baskets). By letting them cool for a minute the snaps should remain pliable and not tear.
Fill with anything from simple whipped cream to extravagant mousses and fruits, or enjoy plain.
