Black Forest Cake
The Black Forest Gateau/Cake is the English name for the German dessert Schwarzwälder Kirschtorte, which literally translates as Black Forest Cherry Torte. However it's not directly named after the mountain range but rather the speciality liquor of the region, known as Schwarzwälder Kirsch(wasser) which is distilled from tart cherries.
Typically the cake consists of layers of chocolate sponge, sandwiched with whipped cream and cherries and decorated with more whipped cream, cherries and chocolate shavings.
Our version of this classic had a chocolate roulade sponge as it's base which was cut into three, brushed with Kirsch and then spread with morello cherry jam. Whipped vanilla cream was then piped onto the first layer and the gaps filled with tinned black cherries. This was repeated for the next layer and then topped with a final layer of the Kirsch soaked sponge.
Instead of a whipped cream topping we choose to decorate with some homemade chocolate macarons, fresh cherries and some dark chocolate shavings. To finish off the chocolate feast we added a side of cherry liqueur chocolates.
