A Crafty Stew
Beef and Ale Stew
In celebration of St George's day, and rather aware that the weather hasn't quite warmed up yet, we decided to make a hearty stew with one of our favourite brews, Moreland Brewery's Old Crafty Hen.This is the Gents standby, hug in a bowl, stew, so feel free to tweak and change as you see fit.
Start by coating your stewing steak in a generous amount of seasoned flour. We like to add dried herbs, pepper and salt, and a good helping of mustard powder, but get creative!
Brown well in batches then set-aside. Add onions (we like whole shallots), carrots and potato. Don't cut them too small, you want chunky hearty pieces later. Get a little bit of heat into your veg then place your beef and any remaining flour back in your pan.
Next add your favourite beer, or cider, or wine. About 500 ml of whatever you like, then top up to cover with water. Bring to a simmer, then with a lid on, place in a pre-heated oven (about 160 degrees fan) and leave for a couple of hours.
Serve with vegetables of your choice and maybe even another glass of that beer...
