Banana & Blueberry Muffins
These Banana & Blueberry Muffins from BBC Good Food are a great on-the-go breakfast. Not only are they super easy to make, they use up those overripe bananas you have in your fruit bowl and they are low in fat! What more do you want?
Start with your dry ingredients, mix together your flour, bicarb, oats and sugar (reserving some of the sugar for the topping). We also added some cinnamon for a bit of spice. Next comes the wet, mash up your bananas and add to them the buttermilk, oil and egg whites. Stir until it is evenly combined.
Pour the liquid mix into the dry ingredients and stir to combine. Don't over-mix, it will look lumpy and you will have the odd fleck of flour still showing. Gently fold in the blueberries and divide the mix between your cases. Sprinkle the tops with oats and your reserved sugar - we changed the muscovado for demerara for a little bit of crunch.
Bake for 18-20 minutes until risen and dark golden, and there you have it 12 tasty grab and go breakfasts for the week. They keep well for 3 days in an airtight container or why not pop them in the freezer (for up to a month) and get them out when needed.
