A flash of inspiration in the form of a half remembered recipe from the King of "chilli hum", Mr Jamie Oliver. This sharing 'Asian-Style Seafood Parcel' is just the ticket for adding some speedy heat to your week.
We've tweaked the recipe according to our tastes as well as availability of ingredients. If you actually look at the recipe before hand and can get to a decent fishmonger and Asian supermarket then even better, but our version should be achievable at your local store.
Simple whizz up the ingredients for the marinade in a blender or 'muddle' together in a pestle and mortar. Lay your veggies and fish on a large piece of greaseproof paper and foil, keeping things chunky, and drizzle over your marinade.
Seal tightly and place in a hot over for 15 minutes. By the time you've cooked some rice and opened a beer you'll be rewarded with a heady fragrant treat, a world away from chilly England.
Due to a lack of availability of Asian lagers we've gone left field and served a cheeky San Francisco 'Anchor Steam Beer'. A lovely crisp accompaniment to this fresh and lively supper.
