This fluffy Russian apple cake by Chef Matt Danko uses his father's tried and tested recipe.
It's a fatless sponge that uses no additional raising agents, save the eggs. The result is a crisp crusted exterior that gives way to delightfully light and crumbly spiced sponge, before hitting the soft and sharp apple base.
There is a distinct risk of collapse if you open the oven too soon, but don't worry, stick to the recipe and you'll be fine. Alternatively if the crust does collapse it'll look rather pretty when it's dusted.
