Apple Crumble Cupcakes
Grey wintery days deserve puddings and comforting flavours like cinnamon and apple. These apple crumble cupcakes from The Humming Bird Bakery's book 'Cake Days' comes to the Gents by way of the fantastic Gloverly Cupcakes.
Start preparing your apple filling. Warm chopped eating apples (we used a 'Perfectly Imperfect' crisp Kent Cox) with butter, brown sugar and cinnamon until tender and glossy then set aside.
For the cupcake mix, rub your butter together with your dry ingredients to form fine breadcrumbs before adding your wet ingredients and creating a smooth batter. Spoon into cupcake cases then spoon your apple mix on top. Don't worry when it disappears, it's meant to sink!
Bake until golden and the cakes spring back then set aside to cool completely. To decorate; start by making the crumble topping. Mix flour, oats and cinnamon then rub in your butter. Scatter the mix on a baking tray and bake until lightly brown, then cool. Next make a simple vanilla buttercream with added cinnamon and pipe onto your cooled cupcakes. Scatter with the crumble mix and you're good to go!
