Anglo-American Bourbon-Infused Carrot Cake
#TwitterBakeAlong (from The Baking Nanna and Rob Allen) is celebrating one of the most joyous uses of the humble carrot by asking us all to bake a carrot cake. This isn't the first time that carrot cake has made an appearance on Twitter Bake Along. Back in January 2017 Mat Riley asked us all to have a go at making his aunty Bev's favourite carrot cake and it really was rather good.
However, we decided to go a little 'off piste' with this recipe from BBC Good Food magazine's May issue (we know it's April!), which gives a nod to the forthcoming royal wedding and combines classic British with some stereo-typical Californian tendencies. Out goes the flour and refined sugar and in come 'healthy alternatives' and a splash of bourbon.
It's as simple as combining wet and dry with maple syrup taking the place of sugar (we used date syrup for a fruity kick) and ground almonds and coconut in place of flour. The usual spices of ginger and cinnamon are here along with a sprinkling of sultanas (soaked in bourbon). In place of classic walnuts this recipe goes tropical with chunks of pineapple for a pina colada feel.
If, like us, you only have two sandwich tins then you may think about scaling down this recipe. However, we opted for a large square pan and, once cooled, sliced and filled for a large oblong sandwich.
There are two suggested toppings; one that sounds seriously Californian and just a touch too healthy, and a classic cream cheese frosting with fresh lime zest. We opted for the latter.
